After eating one year wheat free, what have we noticed?
1. All tests for Celiac have come back inconclusive for Josh, Tristan, Asher
2. Josh finds it to hard to stick to the diet.
3. Nothing got better with Asher until we switched to lactose free dairy. Wall-ah! No more tummy pain or diarrhea. He is lactose-intolerant not wheat-intolerant.
4. Tristan is definitely wheat intolerant, not a celiac though. Whenever he eats too much wheat, bam! Tummy issues, diarrhea, trouble with wiping.....Auntie Megan had wheat problems as a kid too. In fact I think a lot of the Stubblefields have these issues. For now Tristan stays wheat free with an occasional treat that is not.
5. I have learned after 1 year completely wheat free how to adjust our family's mean plan and now can cook meals that include some of everything. We have once again incorporated wheat snacks and breads into our diet, but Tristan stays away. (BTW, he is not lactose intolerant).
6. Eating wheat-free has helped us to be more aware of the foods we eat and eat more fresh fruits and veggies. But man,I have to admit I do love warm bread and butter or an Oreo every once in a while.o)
